Split Pea Soup

Ingredients:

2 cups split peas
8 cups cold water
1 diced potato
1 diced parsnip
1 diced parsley root
parsley leaves
1 diced small onion
1 diced carrot
1 minced garlic clove
2 Badia sazon pkgs
3 beef bullions
2 tbs olive oil



Instructions:

Heat olive oil in large pot and add all diced vegetables & saute. Add water to cover at least. Add spices. Simmer for one hour or longer until split peas are soft. Puree. Taste & adjust seasoning by adding salt & pepper. Variation: For meat meals, thinly sliced hot dogs can be added.
