Blintzes OneCuisine: Dairy Category: Side Dish Servings: 6 Ingredients:2 eggs1 1/2 cups flour 1/2 tbs sugar 1/8 tsp salt 1 3/4 cups water margarine for frying Cheese Filling: 8 oz cream cheese 1/2 cup cottage cheese 1 egg yolk 2 tbs sugar 1 tsp vanilla Potato Filling: Instant mashed potatoes according to directions. Instructions:Combine flour, sugar, salt. In large mixing bowl beat eggs. Alternately add dry ingredients with water till batter is smooth. Use 8" frying pan, lightly grease pan & heat till hot. Pour 2 tbs of batter into hot pan & swirl to cover pan & pour excess back into batter. Cook batter till edges look done, probably not more than a minute. Turn blintze out onto plate. Repeat till batter is used up. Prepare filling. Assemble as follows: Place 1 tbs of filling on cooked side of blintze, fold over filling, fold sides in & roll. Can be frozen at this stage. To serve, the blintzes can be browned in margarine in frying pan or baked in greased pan & margarine brushed on top. Bake a 375 for about 1/2 hr or until nicely browned.
