Stuffed Zucchini-Parve

Ingredients:

1 cup long grain rice
1 carrot
2 stalks celery
1 onion
1 green pepper
6 mushrooms
1/4 cup margarine
1 egg
salt & pepper to taste
10 med size zucchini
3 cans tomato sauce
brown sugar
lemon juice


Instructions:

Cook rice according to box directions. Preheat oven 325. Chop all vegetables. Saute with margarine until soft & mushy, but not browned. Combine with egg . Wash and core zucchini and stuff with rice mixture. single layer the stuffed zucchini in a baking pan. The core of the zucchini an be added. Mix tomato sauce, with sugar & lemon juice and pour over the zucchini. Cover tightly and bake for 1 1/2 hrs. Check after 1 hour. Taste sauce and adjust seasoning if necessary. Should taste sweet & sour like stuffed cabbage. Can be frozen
