Ingredients:

1 pkg dry yeast
1 tsp honey
1 cup warm water 105-115
3 cups flour
1 tsp kosher salt
1 tbs olive oil


Instructions:

Dissolve yeast and honey in 1/4 cup warm water. Set aside for ten minutes for the yeast to bubble. In mixer with dough hook, combine flour & salt and the oil and proofed yeast amd the remaining 3/4 cup warm water. Mix on low speed until mixture comes away from bowl and starts to climb up the dough hook. Turn dough on to floured surface and knead by hand for about 2 or 3 min more. The dough should be smooth and firm. Cover dough with a wet paper towel and let rise in cold oven until it doubles and stretches, about 1 hr or so. Divide dough into 4 balls. and you will have 6 oz each. Work each ball until smooth about 1 min. Can be wrapped and refrigerate of 2 days or frozen. Defrost completely before rolling out. Makes 4 small pizzas.
