Ingredients:

1 whole head of garlic (2 1/2 oz)
2 cups extra virgin oil
1 tbs red pepper flakes (optional)


Instructions:

Seperate cloves and peel. In small saucepan combine the cloves with the oil and bring to simmer. Reduce heat and simmer until garlic turns brown, about 10-15 min. Do not let garlic turn too brown or the oil will be bitter. Remove from heat & cool. Add pepper flakes and let infuse for 2 hrs for flavor to blend. Refrigerate in covered jar for up to 2 wks
