Spaghetti Squash

Ingredients:

2-3 lbs spaghetti squash
garlic powder
olive oil
assorted veggies
canned or fresh tomato bits.


Instructions:

Heat oven to 425. Cut squash in half and remove all seeds and membrane and brush with olive oil and garlic powder. Roast for 45 min. or until squash is soft. When cool enough to handle use a fork and scrape into a bowl and spray with olive oil spray and sprinkle a little salt on it. Saute vegetables such as mushrooms, broccoli, onions, celery, peppers etc. in olive oil . When they are done sprinkle with garlic powder & salt and pepper, add fresh tomato bits. Toss with squash. Mix together and pour into a sprayed casserole dish and reheat when serving
