Yellow Squash

Ingredients:

1 tbs olive oil
2 tbs margarine
1/2 red pepper chopped
2 small yellow squash, sliced
salt & pepper to taste
2 tbs chopped fresh parsley
2 tbs chopped scallions


Instructions:

Preheat skillet & add oil, then margarine. When margarine melts, add red peppers & squash. Saute 12 to 14 min until squash is tender. Add salt & pepper and parsley. Add scallions. Mix all together & serve.
