Cauliflower & Parsnip Hash BrownsCuisine: Pesach Category: Vegetable Servings: 8 Ingredients:1 head cauliflower2 large parsnips 4 tbs extra virgin olive oil 2 tsp kosher salt 8 cloves garlic, chopped 1/4 tsp red pepper flakes Instructions:Separate cauliflower. Slice 1/8" thick. Save "crumbs". Thinly slice parsnips. Heat 2 tbs. oil in 2 large skillets over med heat. When hot, not smoking, add cauliflower & parsnip slices in single layer. Do not stir. Let them cook until nicely browned about 3 min. Add salt, reserved cauliflower crumbs, garlic, red pepper flakes & gently stir them.
