Cauliflower & Parsnip Hash Browns

Ingredients:

1 head cauliflower
2 large parsnips
4 tbs extra virgin olive oil
2 tsp kosher salt
8 cloves garlic, chopped
1/4 tsp red pepper flakes


Instructions:

Separate cauliflower. Slice 1/8" thick. Save "crumbs". Thinly slice parsnips. Heat 2 tbs. oil in 2 large skillets over med heat. When hot, not smoking, add cauliflower & parsnip slices in single layer. Do not stir. Let them cook until nicely browned about 3 min. Add salt, reserved cauliflower crumbs, garlic, red pepper flakes & gently stir them. Cook for another 5 min until vegetables are cooked thru and serve hot. Serves 8
