Asparagus Cream Soup

Ingredients:

1 lbs asparagus
2 tbs veg oil
1 chopped med onion
1 leek, white & pale green parts
4 cups chicken stock or parve
1 med potato, diced
1/2 tsp marjoram
1/8 tsp nutmeg
1/2 cup parve creamer or soy milk
1/4 tsp pepper
2 tsp lemon juice
1/4 tsp white pepper
2 tbs Marsala wine, sherry


Instructions:

Wash asparagus , snap off ends & cut and reserve tips. Cut stalks 1/2" pcs. Set aside. Heat oil in soup pot, add onions and leeks. Saute for 5-7 min or until leeks start to shine. Add chicken stock, potato, marjoram & nutmeg. Bring to boil & add chopped asparagus stalks. Reduce heat and simmer for 35-40 min. Puree soup. Return to pot & add creamer, lemon juice, pepper & sherry. When it starts simmering again, add asparagus tips & simmer for another 10 min. Serves 6
