Parsnip Bisque

Ingredients:

2 tbs olive oil
1/2 diced Spanish onion
3/4 diced celery stalk
1 or 2 minced garlic cloves
6 med parsnips, peeled, diced
2 Idaho potatoes, peeled, diced
8 cups chicken stock
salt
fresh pepper
fresh chives, optional


Instructions:

Heat large soup pot, add oil, onion. Saute til translucent, add celery & garlic, saute 2 more min. Add all ingredients, except seasoning & cover. Simmer for 30-35 min or until veg are tender. Cool. Puree. Garnish with chives.
