Blueberry Coffee Cake

Ingredients:

2/3 cup margarine
1 1/2-1 2/3 cups sugar
3 cups flour
1 tsp lemon extract
1 tbs grated lemon rind
1/2 tsp salt
3 tsp baking powder
3 eggs
1 cup soy milk, or parve creamer
2 or 3 cups floured blueberries


Instructions:

Heat oven to 350. Grease & flour a 9x12 baking pan. In mixer cream sugar and margarine, add 3 cups flour. When mixture is crumbly, remove 1 cup for topping. Add lemon extract, rind, salt & baking powder, mix together. Add eggs, soy milk. Blend together until well mixed. Batter should look as sour cream, if not add about 1/3 cup or more flour. Flour blueberries and gently add to batter. Spread batter into baking pan, top with crumbs and bake for 40-50 min. It is ready if toothpick inserted in center comes out clean.
