Latkes, SpinachCuisine: Parve Category: Vegetable Servings: 8 Ingredients:1/2 chopped green pepper1 med size onion chopped 2-3 chopped celery sticks 3 large carrots chopped 1 1/2 cups 3 tbs margarine 10 oz defrosted chopped spinach 3 large eggs 1 1/2 tsp salt 1/8 tsp pepper 3/4 cups matzoh meal Instructions:Grate all vegetables & saute them with margarine. Add defrosted, drained spinach & cook for another 10 minutes. Beat eggs slightly & add seasoning & matzoh meal. Saute another minute or two. Taste & adjust seasoning. Add more matzoh meal if needed. Chill for 1/2 hr or overnight. Heat skillet with oil covering the bottom of pan. Drop by spoonful and flatten with back of spoon. Lightly brown on both sides. Can be frozen & reheated in oven.
