Oatmeal Cookies

Ingredients:

1 cup margarine or butter
1 cup brown sugar
1 cup white sugar
2 large eggs
2 tsp pure vanilla extract
1/2 tsp parve butter flavor (optional)
2 cups all purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1 tsp cinnamon
2 tsp grated parve choc
3 cups old-fashioned rolled oats
1 cup dried cranberries, or raisins
1 cup of chopped walnuts (optional)
1 cup chocolate chips or chunks





Instructions:

Preheat oven to 375 F. Line 2 baking sheets with parchment paper. Set aside. In bowl of electric mixer, with the paddle attachment, cream the margarine and sugars until creamy and smooth (about 2 - 3 minutes). Add the eggs & vanilla & beat to combine. Add the flour, baking soda, salt, grated chocolate and old-fashioned oats and beat until incorporated. Stir in the cranberries and chocolate chips, walnuts. For small cookies place about 1 tablespoon of batter on the prepared baking sheet, spacing cookies about 2 inches apart. For larger cookies, use an ice cream scoop (I like to use one that holds about 2 1/2 tablespoons batter). (If your batter is too soft, place in the refrigerator for 30 minutes to firm it up before baking the cookies.) Flatten cookies slightly with palm of hand and bake cookies about 10 minutes for smaller cookies and 13-14 minutes for larger cookies, or until light golden brown. Remove from oven and let cookies cool about two minutes on the baking sheet before transferring them to a wire rack to cool. Makes about 4 dozen small, 32 large cookies Can be frozen Suggestion: if the cookies have crevices, the crevices should appear moist. When baking smooth cookies, look at the edges, which should be lightly browned; the center should be set but not fully dry
