Peach Soup (Peggy)

Ingredients:

10 peaches, peeled, pitted and sliced (about 5 cups) reserving 8 to 10 slices for garnish
2 cups fresh orange juice
3/4 cup drained canned crushed pineapple reserving l/2 cup of the juice
1 tsp. ground ginger
1 cup sour cream
Confectioners sugar to taste if desired (I didn't have confectioners sugar, so I used 1 envelope Sweet and Low
Mint sprigs for garnish (optional)


Instructions:

In a food processor puree the peaches with l/2 cup of the orange juice, transfer the puree to large bowl and add the remaining l l/2 cups orange juice. In the food processor puree the pineapple with l/4 cup of the reserved pineapple juice and stir into the peach puree. Whisk in the ginger, sour cream and enough of the pineapple juice to thin the soup to the desired consistency. Stir in the confectioners sugar if desired and chill the soup covered until it is cold. Serve in chilled bowls garnished with the peach slices and mint, if desired. Makes about 7 cups, serving 8 to 10. not tried
