Spaghetti, Caraway & Veggies

Ingredients:

1 lb thin spaghetti
3 tbs olive oil
4 cups thinly sliced cabbage
1 small thinly sliced red onion
1 small zuchini, halved & sliced
1 large shredded carrot
2 minced cloves garlic
1/2 tsp caraway seeds
1/4 tsp crushed red pepper
3 tbs vinegar


Instructions:

Cook spaghetti. Drain. In large saucepot, heat oil. Add cabbage, onion. Stir fry for 1 min. Add zuchini,carrots garlic & caraway & red pepper. Stir fry until tender. Stir in vinegar. Add hot spaghetti, toss to mix. Heat & serve. Serves 8 Does not reheat well.
