Butternut Squash & Craisins

Ingredients:

1 med butternut squash
1 tbs margarine
kosher salt
lemon juice
1/4 cup craisins
1 tbs maple syrup


Instructions:

Preheat oven 375. Peel squash. Scrape out seeds and stringy center. cut into cubes. Sprinkle salt & toss in baking pan with margarine & cranberrie. Bake for 1/2 hour. Test to see if soft. Remove from oven & spinkle maple syrup and lemon juice. Toss to mix. Return to oven for another 10 min. Taste and adjust Maple syrup and lemon juice. Shut off oven. Cover pan and return to oven for 1/2 hour. Can be frozen. Serves 6
