Butternut Squash & CraisinsCuisine: Pesach Category: Vegetable Servings: 6 Ingredients:1 med butternut squash1 tbs margarine kosher salt lemon juice 1/4 cup craisins 1 tbs maple syrup Instructions:Preheat oven 375. Peel squash. Scrape out seeds and stringy center. cut into cubes. Sprinkle salt & toss in baking pan with margarine & cranberrie. Bake for 1/2 hour. Test to see if soft. Remove from oven & spinkle maple syrup and lemon juice. Toss to mix. Return to oven for another 10 min. Taste and adjust Maple syrup and lemon juice. Shut off oven.
