Spanish Rice Peppers

Ingredients:

4 med sized green pepers
4 med sized red peppers
4 cups water
2 beef bullionsin 4 cups water
2 cups uncooked white rice
1/4 cup diced onion
2 tsp minced garlic
1/8 tsp pepper or 2 tbs Jalapeno pepper
3 tbs tomato paste
2 tbs olive oil


Instructions:

Bring 4 cups of water with bullions to a boil. Dice the tops of the peppers. To boiling water add diced pepper tops, onion, rice, pepper & tomato paste,olive oil. Cover & simmer until liquid is absorbed. Cool for 15 min. Preheat oven to 350. Stuff cleaned peppers with rice mixture. Place in casserole. Add 2 cups of tomato juice. Bake uncovered in oven for 40 min. Remove and spoon tomato juice over top & bake 10 more min. Serves 8. For dairy: Add shredded monterey jack shredded cheese on top of rice before baking for the last 10 min. Not Tried
