Potato Salad with String Beans

Ingredients:

1 1/2 lbs small red potatoes
3/4 lb green beans
1 dice red onion
fresh basil (optional)

Dressing:
1/4 cup Balsamic vinegar
2 tbs lemon juice
2 tbs dijon mustard
1 clove garlic, minced
1/2 cup Extra Virgin Olive Oil
salt & pepper


Instructions:

Steam Potatoes til soft. Drain. Drop string beans into boiling water for 1 min. and then into ice water to stop cooking action. Cut potatoes in half while still warm add string beans & onions. Toss with dressing. Add basil if desired. Serves 8 NOT TRIED
