Salmon Patties

Ingredients:

2 (14-ounce) cans salmon, drained
2 egg whites, beaten
1/3 cup Italian bread crumbs
1 tb all-purpose seasoning
A few drops hot sauce
2 tbs chopped flat-leaf parsley
3 to 4 tbs chopped roasted red pepper from a jar, drained, chopped
Salt and pepper
1 tablespoon vegetable oil, 1 turn of the pan


Instructions:

Heat medium skillet over medium high heat. Combine salmon, egg white, bread crumbs, seasoning, hot sauce, parsley, roasted red pepper and salt and pepper. Form 4 patties, 1-inch thick. Add oil to hot pan. When oil is hot add patties and cook about 3 minutes on each side until golden brown and cooked through. variation: I used 4 cans of salmon from costco, added 1 whole egg, substitued 1prepared 1 pkg of mashed potato flakes according to directions for bread crumbs and used crumbs to dip patties before frying in pan. It made 8-10 patties.
