Ingredients:

1 lb carrots sliced
Pinch of salt
water to cover
Honey
Orange zest
Craisins


Instructions:

Peel & slice carrots into rings. Cover with water with salt or soup bullion and simmer until tender. Add 2 Tbs honey, orange zest from 1 orange, handful of craisins. Cook 10 more min. remove from heat and let it sit for 1/2 hr. Tast and adjust seasoning, either more honey or touch of orange juice. Can be made in advance. Do not freeze. Do not substitute orange juice,for water, it does not taste right.
