Cauliflower Pureed

Ingredients:

2 1/2 lbs fresh cauliflowerts, or 2 heads chopped
5 garlic cloves slice
1 2/3 cup chicken broth
2 1/2 tsp Kosher salt
1/2 cup soy milk or coffee rich
5 tsp margarine
Fresh ground pepper


Instructions:

In large pot, place chopped cauliflower, garlic, broth, & salt. Bring to boil & cover. Simmer for 10 min until cauliflower is soft. Transfer to processor or use stick blender & add margarine, soy milk. Process until smooth. If too thin, add 2 tbs of instant potato flakes. Season with pepper. Variation: Substitute 8 peeled, sliced carrots and let simmer longer.
