Baked Parsnips

Ingredients:

4 parsnips
olive oil
salt & pepper
chopped fresh thyme


Instructions:

Preheat oven to 375. Peel and slice wedge shped pieces. Boil in water for few minutes to start the cooking process. spread in Roasting pan, sprinkle with the rest & bake turning every 10 minutes until the edges brown and the center is soft. serve hot with any roast.
