Cornish Hens Stuffed

Ingredients:

4 to 5 med. sweet potatoes
1 egg
1/2 c. butter
1 tsp. cinnamon
1/2 tsp. nutmeg
Pecans, optional
orange zest
4 cornish game hens
Glaze
apricot jam
orange juice
2 tbs soy sauce



Instructions:

Heat oven to 425 degrees. Peel, cube and boil sweet potatoes until they are soft. Approximately 25 to 30 minutes. Drain potatoes. Mash with egg, butter, and spices. add a little honey if not sweet enough. Stir in pecans if desired. Stuff cornish hens and bake. In large shallow open pan, without rack, roast stuffed Cornish Hens at 425 for 15 min. Lower to 375 for 1/2 hour or until well browned and drumstick twist easily out of thigh joint, glaze last 10 min. Arrange birds on bed of watercress on serving platter; pour drippings from pan over them. Not tried
