Apples & Honey TartCuisine: Parve Category: Pies, pastry Servings: 10 Ingredients:1/3 cup honey2 tbs fresh lemon juice 3 med granny smith apples 3/4 cup sugar 6 tbs margarine, softened 1/4 cup dark brown sugar 1 tsp vanilla 2 large eggs 1 tsp grated lemon rind 1 cup flour 1 tsp baking powder 1/4 tsp salt 1 tbs sugar 1/2 tsp cinnamon Instructions:Preheat oven 350. Coat 9" springform pan with cooking spray. Peel core and slice apple into 8 to 10 wedges. Combine honey & lemon juice in large nonstick pan. Bring to simmer over med heat. Add apple slices and cook for 12-14 min or until almost tender, stirring to coat apples. Remove from heat and set aside. In mixing bowl, combine 3/4 cup sugar, margarine, brown sugar & vanilla. Beat at med until well blended (about 1 min) Add eggs and beat. add grated lemon rind. In separate bowl, combine flour, baking powder & salt. Stir with whisk to combine. Gradually add flour mixture to the batter. Beat on low until well blended. Pour batter into prepared pan. Remove apples from skillet and drain, discarding liquid. Arrange apple slices in a concentric spoke-like design on top of batter. Combine 1 tb sugar with cinnamon and sprinkle over tart.
