Turkey GravyCuisine: Meat Category: Sauces Servings: 10 Ingredients:6 cups chicken stockturkey neck & giblets (optional) 1 onion quartered 1 bay leaf 6 tbs margarine, or olive oil 2 large onions thinly sliced 1 tsp dried rosemary 1 tsp dried sage 1/3 cup flour 1/2 cup balsamic vinegar (optional) Instructions:Combine stock, giblets if desired, quartered onion, bay leaf in pot.Simmer for 1 hour or until reduced to 3 cups liquid, skim if necessary. In large skillet, heat oil over med heat, add sliced onions rosemary & sage & saute about 15 min or until onions are golden. Add flour & stir for 1 min.Add balsamic vinegar. Gradually whisk in stock mixture into onions mix, disregarding bay leaf & quartered onion. Boil for 3 min or until gravy thickens, stirring often.
