Fish Salad

Ingredients:

1 lb cod, halibut or flounder (2 cups cooked cooled) any white meat fish,flaked
1 cup diced celery
1/4 cup chopped green or red bell pepper
1 teaspoon salt, or to taste
1/4 teaspoon pepper
1 tablespoon fresh lemon juice
3 tablespoons mayonnaise
mixed salad greens
6 avocado wedges, optional


Instructions:

Lined bottom of poaching pot with sliced lemon, poach fish in small amount of broth about one inch deep. Add 1/2 cup white wine. Cover and poach for about 10 min. Cool & flake add all other ingredients and mix well. Place on salad greens with avocado wedges tht have been dipped in lemon juice. Serves 6 Not tried
