Green Bean Salad

Ingredients:

1 lb fresh green beans
2 tb minced scallions
1 tb dried tarragon
1 tb red wine vinegar
1 tsp. Dijon mustard
1/2 tsp kosher salt
1/4 tsp ground pepper
2 tb olive or walnut oil
2 cups thinly sliced radishes
1 handful toasted walnuts


Instructions:

Cook green beans in boiling salted water, 2 o3 min. Chill in ice water. drain. In large bowl mix all ingredients except beans, radishes and walnuts til well blended. Add beans & radishes and toss. Cover & ref. Sprinkle walnuts just before serving. Can be made up to 2 hours before serving. Tried: preferred serving warm instead of cold. Did not try with red wine vinegar.
