Apricot Trifle

Ingredients:

Apricot Puree:
6 oz dried apricots
1 1/2 cups apricot nectar
1/4 cup sugar

Cake:
7 eggs separated
1 tsp kosher salt
3/4 cup matzoh meal? cake meal?
1/3 cup potato starch
1 1/4 cup sugar
1/2 cup honey
1/2 cup oil
3 tbs white wine

Trifle:
1/2 cup+1 tbs straberry jam
3 tbs apricot puree
1 1/2 pts raspberries
1 1/2 pts strawberried
1/2 pt blueberries
1/2 pt blackberries (halved)
8 oz parve whip


Instructions:

Apricot Puree: In saucepan combine apricots,apricot nectar & sugar. simmer, stirring until sugar dissolves. Cover & continue to simmer until apricots are tender, about 12 min. Process until prueed. Ref. Cake: Preheat oven to 350. Combine matzoh meal & potato starch. Whisk to mix together.. Using elec mixer, beat egg yolks and 1/4 cup sugar until very thick, about 6 min. Gradually beat in 2/3 cup apricot puree, honey, oil & wine. Using clean beaters, beat eggwhites & salt until whites are stiff not dry. Fold whites into yolk mixture gently in 4 batches. BAke in 10" tube pan with removable center, about 45-55 min until toothpick comes out clean. Invert immedately & coll completely. Remove from pan when cool. Whip Cream with 1 tbs. Instant vanilla pudding & 1 tbs liqueur Compote: Combine all berries & jam & 3 tbs apricot puree. Trifle: Start layer with Berry compote, then cake sliced into pieces, them compote & whip cream. Repeat & end with whip cream. Do not freeze as berries with become mush. Not Tried. Variation: Maybe Apricot Jam & yellow cake mix can be substituted.
