Potato Salad Hot

Ingredients:

3 lb. potatoes
1 tbs olive oil
1/4 C. chopped onion
1 Tbs. flour
2 tsp. salt
1/4 Tbs. sugar
1/4 tsp. pepper
2/3 C. cider vinegar
1/3 C. water
1/2 tsp. celery seed
3 Tbs. chopped parsley



Instructions:

Cook potatoes in jackets until tender. Cool, peel, and thinly slice. Heat oil & fry chopped onion and cook one minute or until translucent. Blend in the flour, sugar, salt and pepper. Add vinegar and water. Cook ten minutes, stiffing well, Pour over sliced potatoes, add celery seed and parsley. Toss gently, and serve warm. Not Tried
