Red Lentil Soup

Ingredients:

1 1/2-3 tbs olive oil
1 large onion, chopped
2-3 garlic cloves, chopped
2 carrots, chopped or diced (1 cup)
1/2 cup chopped fresh or canned tomato or 1 tbs tomato paste
1 celery rib, chopped (optional)
1 tsp ground cumin
1/2 tsp salt
1/4 tsp pepper
pinch of chili powder to taste
1 cup dried red lentils
4 cups water
2 cups chicken broth
2 tbs chopped fresh parsley
2 tsp freshly squeezed lemon juice, or to taste


Instructions:

Heat oil in a 4 to 5 quart heavy saucepan over moderately high heat until hot but not smoking, then add onion, saute until golden, about 5 minutes. Add garlic, carrots, tomato, celery, cumin, chili powder and salt & pepper and saute, stirring, for 2 minutes. Add lentils, water, and broth and simmer, partially covered, stirring occasionally, until lentils are tender, about 20 minutes. Taste & adjust seasoning. Using an immersion blender ,puree half the soup and return to the pot. Soup should be chunky. Stir in parsley and lemon juice; then season with salt and pepper. Serves 6-8
