Potato Crusted Chicken

Ingredients:

3 1/2 lb chicken cut into 1/8's
1 large onion
2 tbs oil
1 large egg
2 tbs water
1 cup instant potato flakes
spices &
2 tbs onion soup mix
1/4 cup water


Instructions:

Cut chicken into 1/8's and clean. Sprinkle a mixture of garlic powder, onion powder, pepper & paprika. Refrigerate for 1 hr or overnight. Saute sliced onion in the oil until golden. Line bottom of pan with sauteed onion. Blend egg with 2 tbs water. Dip chicken into egg then into flakes that are mixed with onion soup mix & spices and then into egg again. Place chicken in single layer on top of onions in pan. Sprinkle a little more of the garlic, pepper, paprika mixture, add 1/4 cup of water to bottom of pan. Cover with foil and bake @ 350 for about an hour. Raise oven temp. to 375 and uncover and baste. Bake another 1/2 hr or a little longer. Can be frozen
