Vegetable Soup

Ingredients:

2 large carrots
3 celery stalks
1/2 large green pepper
1 large potato
1/4 small cabbage
1 large onion
2 tbs oil
8 oz tomato sauce
2 tbs onion soup mix
1 parsnip
1 turnip
piece of celery knob or celery root
4 soup bullions
8 cups water


Instructions:

Chop all vegetables in processor except 1 celery,1 carrot. Slice the carrot and the celery stalk. Saute everything with the oil. Add water soup bullions and tomato sauce. Simmer for about 1/2 hr. Adjust flavor. Add more bullion or salt & pepper. can be frozen.
