Pickled Salmon BellaCuisine: Pesach Category: Appetizer Servings: 12 Ingredients:1 1/2 lbs salmon filet2 large onions 1 cup vinegar 1 cup water 2/3 cup ketchup 1/2 cup sugar salt & pepper to taste 2 tbs pickling spices 2 pcs of cheesecloth Instructions:Bring to boil 4 quarts water with 1 sliced onion & 1 tbs pickling spices wrapped in cheesecloth. Add salmon cut into bite size portions. Turn off pot and let sit for 5 min. Remove salmon from pot. Cool slightly. Microwave sauce until sugar dissolves. Slice raw onion and layer in bottom of a container. Add 1 tbs of pickling spices wrapped in cheesecloth and a layer of poached salmon. Pour sauce to cover fish and then a layer of onions and repeat with sauce last. Cover tightly and let stand for 3 to 4 days. Will keep for a couple of weeks.
