Potatoes and Zuchini

Ingredients:

6 large diced or sliced potatoes
1 large sliced green pepper
1 large diced red pepper
1 large sliced onion
1 green zucchini
1 yellow zucchini
1/4 olive oil
1 1/2 tsp kosher salt
1/4 tsp pepper
1 tsp garlic powder


Instructions:

Either cube or slice in processor all vegetables. Toss with olive oil & spices in large baking pan. Bake covered @375 for 30 min. Uncover and bake for another 30 min until potatoes are soft. Taste and adjust seasoning. Can be reheated. Can be frozen any kind potatoes can be used, red, golden etc
