Corn Salad

Ingredients:

2 11 oz cans white corn
10 oz frozen snow peas
1/2 red pepper
1/2 green pepper
1/2 diced red onion or 2 scallions
3 tbs oil
1 tb lemon juice to taste
salt & pepper to taste


Instructions:

Mix all ingredients together except snow peas. Make ahead and day of serving defrost snow peas and cut in half, then add. Adjust flavoring to taste Variation: Use yellow corn instead & scallions, omit snow peas.
