Couscous Salad

Ingredients:

1 box Couscous (1 1/2 cups)
1 cup water
1 tbs oil
14 oz can artichoke hearts in water
1/2 minced scallions
1 large minced garlic
1 cup chopped fresh parsley
1 tbs fresh tarragon
2-3 tbs olive oil
Juice of 1/2 lemon
1/2 cup chopped walnuts
diced tomatoes



Instructions:

Cook couscous in 1 cup water with 1 tbs oil or follow directions on box. Cool for a few minutes & add all remaining ingredients. Serve warm or at room temp. Variation: Substitute defrosted petite peas (1/2 cup+) for artichoke (Not tried)
