Yam Tsimmes

Ingredients:

3 cups parboiled sliced carrots
3 large baked yams
10 pitted prunes
1 small can pineapple chunks
1/3 cup honey or brown sugar
1/3 cup frozen orange concentrate
1/4 sherry (optional)
1/4 tsp salt


Instructions:

Bake Yams till firm. Peel and slice for a total of 2 cups. parboil sliced carrots. Mix all ingredients together. Pour into greased 2 quart casserole dish. cover and bake @ 350 for 1 1/2 hrs. Uncover last 1/2 hr. Can be frozen can be heated.
