Nut-Cracker CakeCuisine: Parve Category: Cake & frost Servings: 16 Ingredients:4 large eggs2/3 cup sugar 3 tbs flour 1 tbs oil 1 tsp baking powder 3/4 tsp cinnamon 1/8 tsp ground cloves/allspice 3/4 cup finely ground walnuts 3/4 cup crumbed graham crackers 1 oz grated choc chips (1/4 cup) 2 cups parve whipping cream 1 tsp almond extract 1 jar raspberry jam Instructions:Preheat oven to 350. Grease and line 3 8" layer pans. Beat eggwhites to soft peaks, gradually add 1/3 cup sugar. Beat until stiff. In mixer beat flour, oil, baking powder, almond extract, cinnamon, cloves, egg yolks and 1/3 cup sugar until well blended. Scrape bowl and beat for two min. Gently fold eggwhite mixture into eggyolk mixture and add crumbled graham crackers and grated choc chips. Reserve 2 tbs ground walnuts and fold the rest into batter. Divide batter into the 3 pans and bake for 15 min or until toothpick comes out clean. Cool and remove from pans and remove liners. Whip cream with 1 or 2 tbs. instant vanilla pudding to give it body and add 1 tb liqueur for flavor.Place1 layer on cake plate and spread a little raspberry jam and part or whipped cream. Place second layer on top and repeat. Place 3rd layer on top. Frost cake top and sides and use a decorating tube to pipe diagonal lines across the top. Repeat on opposite side to create diamond shapes & also around the edge of the top.
